Grilled Shrimp Marinade

Ingredients

  • 1.5 to 2 lbs raw large or jumbo shrimp (peeled and deveined)
  • ¼ cup extra virgin olive oil
  • 2 tablespoons fresh lemon or lime juice
  • 4 cloves fresh garlic, minced
  • 1 tablespoon honey or brown sugar (helps with caramelization)
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon smoked paprika
  • ½ teaspoon red chili flakes (optional, for heat)
  • ½ tsp Salt
  • ½ tsp black pepper

Directions

  1. Combine olive oil, citrus juice, garlic, honey, parsley, paprika, chili flakes, salt, and pepper in a bowl.
  2. Place peeled raw shrimp in a zip-top bag or shallow dish, pour the marinade over them, and refrigerate for 15 to 30 minutes (do not exceed 1 hour, as citrus acid can make the shrimp mushy)
  3. If using wooden skewers, soak them in water for at least 20 minutes. Thread the shrimp through the tail and the thick part of the body to keep them secure.
  4. Preheat your outdoor grill to medium-high heat (about 375°F to 400°F). Grill the shrimp for 2 to 3 minutes per side, or until they turn pink and opaque.
