Salisbury Steak with Mushroom Gravy
Ingredients
- 1 1/2 lbs lean ground beef
- 1/2 cup breadcrumbs
- 1 large egg
- 1/2 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 8 oz mushrooms, sliced
- 1 small onion, thinly sliced
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley for garnish
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, egg, diced onion, garlic, Worcestershire sauce, onion powder, garlic powder, paprika, salt, and pepper. Mix gently until just combined, ensuring you don’t overwork the mixture, which could lead to tough patties.
- Divide the mixture into 4–6 portions and shape each into an oval patty, taking care to create even thickness for uniform cooking.
- Heat the olive oil in a large skillet over medium-high heat. Once hot, add the patties. Cook for 4–5 minutes per side, until nicely browned and cooked through. Transfer to a plate and keep warm.
- In the same skillet, melt the butter. Add the sliced mushrooms and thinly sliced onion. Cook for 5–7 minutes, stirring occasionally, until softened and lightly browned.
- Sprinkle the flour over the mushrooms and onions. Stir diligently and cook for an additional minute to remove the raw flour taste, allowing it to cook thoroughly.
- Slowly whisk in the beef broth, ensuring to scrape up any browned bits from the bottom of the skillet. Add the Worcestershire sauce, Dijon mustard, garlic powder, salt, and pepper. Allow the mixture to simmer for 3–4 minutes, stirring frequently until the gravy thickens to a luxurious consistency.
- Return the Salisbury steak patties to the skillet, gently spooning the mushroom gravy over them. Cover and simmer gently for 5–7 minutes, allowing the patties to soak up the delightful flavors of the gravy.
- Finally, garnish with chopped fresh parsley and serve hot over a generous scoop of creamy mashed potatoes for the ultimate comfort meal.
Notes
- Overworking the meat mixture: This leads to dense patties instead of tender, juicy ones. Mix just until combined.
- Skipping the resting time for patties: Allow them to rest on the plate after cooking. This prevents them from being overcooked when you return them to the skillet.
- Not scraping the pan: Brown bits left in the pan add incredible flavor to your gravy. Make sure to scrape them up while whisking in the broth.
