Lemon Garlic Roasted Chicken Thighs
Ingredients
- 2 Lbs. bone-in, skin-on chicken thighs
- 2 Tbsp. olive oil
- 4 cloves garlic, minced
- Juice and zest of 1 lemon
- 1 tsp. dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Directions
- In a large bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, dried oregano, paprika, salt, and pepper. Mix well to create a marinade.
- Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
- Preheat your oven to 425°F
- Place the marinated chicken thighs skin-side up on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 35-40 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F
- Once cooked, remove from the oven and let the chicken rest for 5 minutes. Garnish with fresh parsley before serving.
