Savory Pork Loin

INGREDIENTS

  • 3 pounds boneless pork loin roast
  • 2 Tbsp. olive oil
  • 1 tsp of crushed dry rosemary
  • teaspoons garlic salt
  • ½ teaspoon dried thyme
  • ¼ teaspoon ground black pepper
  • 2 carrots peeled and sliced
  • 4 celery stalks sliced
  • 1 medium yellow onion, cut up
  • 1/2 cup white wine
  • 1/2 cup water, chicken broth or vegetable broth

DIRECTIONS

  1. Preheat the oven to 350°F
  2. Combine rosemary, garlic salt, thyme, and pepper. Coat the pork loin with the spices and rub in.
  3. In a 6qt Dutch oven heat olive oil over medium high heat. Brown the pork roast on all sides and then remove and set aside.
  4. Into the pot with the chopped onion, celery and carrots and sauté over medium heat for 2-3 minutes.
  5. Add the wine and water and stir to scrape up the brown bits on the bottom.
  6. Place the pork roast into the Dutch oven and cover.
  7. Bake in the preheated oven until cooked through, about 1 hour and the internal temperature reads at least 145°F
