Savory Pork Loin
INGREDIENTS
- 3 pounds boneless pork loin roast
- 2 Tbsp. olive oil
- 1 tsp of crushed dry rosemary
- 2 teaspoons garlic salt
- ½ teaspoon dried thyme
- ¼ teaspoon ground black pepper
- 2 carrots peeled and sliced
- 4 celery stalks sliced
- 1 medium yellow onion, cut up
- 1/2 cup white wine
- 1/2 cup water, chicken broth or vegetable broth
DIRECTIONS
- Preheat the oven to 350°F
- Combine rosemary, garlic salt, thyme, and pepper. Coat the pork loin with the spices and rub in.
- In a 6qt Dutch oven heat olive oil over medium high heat. Brown the pork roast on all sides and then remove and set aside.
- Into the pot with the chopped onion, celery and carrots and sauté over medium heat for 2-3 minutes.
- Add the wine and water and stir to scrape up the brown bits on the bottom.
- Place the pork roast into the Dutch oven and cover.
- Bake in the preheated oven until cooked through, about 1 hour and the internal temperature reads at least 145°F
