- 1 lb. Sweet Italian Sausage
- ½ cup Olive oil
- 2 Red Bell Peppers, sliced
- 2 Yellow Bell Peppers, sliced
- 2 Yellow Onions, sliced
- 1 tsp. Salt
- 1 tsp. Black Pepper
- 1 tsp. Oregano
- 1 tsp. Basil
- 4 Garlic Cloves
- 2 Tbsp. Tomato Paste
- 1 cup Marsala Wine
- 1 15 oz. can Diced Tomatos
- ¼ tsp. Red Pepper Flakes (optional)
DIRECTIONS
- In a large skillet heat the oil over medium heat, add sausages and cook until brown on both sides, remove and drain.
- Add the peppers and onions to that pan and season with salt and pepper and sauté until golden brown.
- Add the oregano, basil and garlic and cook another 2 minutes.
- Add the tomato paste and stir, then add the Marsala wine, tomatos and red pepper flakes. Stir to combine scraping the bottom of the pan to release brown bits and bring to a simmer.
- Cut the sausages into 1-inch slices and add it back to the pan and stir.
- Cook for about 20 minutes until the sauce thickens.
NOTES
Serve on good Italian rolls with the center hollowed out, buttered semolina bread or with pasta and garlic bread. The sausage may be grilled initially which adds to the flavor.
