Carrot Cake

INGREDIENTS

  • ½ cup Vegetable Oil
  • 2 cups Sugar
  • 4 large Eggs
  • 2 cups Flour
  • 2 tsp. Cinnamon
  • 2 tsp. Baking Powder
  • 2 tsp. Baking Soda1 tsp. Salt
  • 3 cups Grated Carrots

DIRECTIONS

  1. Whisk together the flour, baking powder, baking soda and salt and set aside.
  2. In a mixer, beat the eggs, oil, and sugar until well mixed.
  3. Add the dry ingredients to the wet and mix thoroughly.
  4. Add the grated carrots and mix thoroughly.
  5. Line baking pan(s) with parchment paper and grease the sides with oil.
  6. Pour into 13”X9” square pan, 9” round or two shallow 9” round cake pans for layer cake.
  7.  Bake at 300°F for 1 hour until a toothpick comes out clean.
  8. Remove from oven and cool.

 

Cream Cheese Frosting

INGREDIENTS

  • 1 lb. Powdered Sugar
  • 8 oz. softened Cream Cheese
  • ¼ cup margarine
  • 1 tsp. Vanilla Extract
  • 1 cup chopped Pecans


DIRECTIONS

  1. Mix the powdered sugar and cream cheese then add the margarine and vanilla extract Beat until smooth.
  2. Add the pecans until well combined or reserve the pecans to sprinkle on the frosting.
  3. Frost the COOLED cake and decorate if desired.
