Garlic Parmesan Orzo with Peas
Ingredients
- 1 cup orzo pasta
- 1 cup green peas (fresh or frozen)
- 2 Tbsp. butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Zest of 1 lemon (optional)
Instructions
- In a large pot of boiling salted water, cook orzo according to package instructions until al dente. Drain and set aside.
- Blanch the peas in boiling water for 2-3 minutes until tender.
- In a large skillet over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1-2 minutes.
- Pour in the heavy cream and bring to a simmer. Let it cook for a few minutes until it starts to thicken.
- Add grated Parmesan cheese, salt, and pepper. Stir until the cheese is melted and the sauce is creamy.
- Stir in the cooked orzo and peas. Mix well to combine.
- Remove from heat and stir in the chopped parsley and lemon zest if using.
