Garlic Parmesan Orzo with Peas

Ingredients

  • 1 cup orzo pasta
  • 1 cup green peas (fresh or frozen)
  • 2 Tbsp. butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Zest of 1 lemon (optional)

Instructions

  1. In a large pot of boiling salted water, cook orzo according to package instructions until al dente. Drain and set aside.
  2. Blanch the peas in boiling water for 2-3 minutes until tender.
  3. In a large skillet over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  4. Pour in the heavy cream and bring to a simmer. Let it cook for a few minutes until it starts to thicken.
  5. Add grated Parmesan cheese, salt, and pepper. Stir until the cheese is melted and the sauce is creamy.
  6. Stir in the cooked orzo and peas. Mix well to combine.
  7. Remove from heat and stir in the chopped parsley and lemon zest if using.
