Pierogis and Kielbasa

INGREDIENTS

  • Olive Oil
  • 1 Lb. Kielbasa sliced into ½” pieces
  • 2 medium sized Bell Peppers cut into strips (green, red, orange or yellow)
  • 1 medium Sweet Onion cut into strips
  • 12 Large Pierogis or 24 Small Pierogies (frozen)
  • 1+ Tbs. Butter
  • ½ cup shredded Cheddar Cheese
  • Salt and Pepper
  • Sour Cream

DIRECTIONS

  1. Pre-cook pierogis in boiling water for 3 minutes, drain and set aside.
  2. In a skillet, melt butter and brown the kielbasa slices, remove and set aside (optional)
  3. Add olive oil and onions, heat for 2 minutes then add the peppers and season with salt and pepper to taste, cover and cook for 10 minutes until tender over medium low heat.
  4. Add the pierogis and toss, fry until the pierogis and vegetables begin to brown, add additional butter or olive oil if needed.
  5. Add the pierogis and shredded cheddar and toss, cover and let the cheese melt.
  6. Serve with sour cream, salt and pepper as desired.
