Meatloaf

Ingredients

  • 1-1/2 Lb. ground beef
  • 1 large egg, beaten
  • 1 onion, chopped small
  • 1 cup milk
  • 1 cup dried seasoned breadcrumbs
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup ketchup
  • 1 Tbsp. spicy barbeque sauce
  • 2 Tbsp. brown sugar
  • 2 Tbsp. prepared mustard

 

Instructions

  1. Preheat oven to 350°F
  2. Combine ground beef, onion, milk, breadcrumbs, egg, salt and pepper in a large bowl and combine by hand but do not overwork.
  3. In a separate bowl, combine ketchup, barbeque sauce, brown sugar and mustard and whisk until well blended.
  4. Line a baking sheet with non-stick aluminum foil, place the meat mixture on the pan and shape into a loaf
  5. Coat the loaf with 1/2 of the glaze reserving the rest for later.
  6. Bake 30 minutes, baste with the remaining glaze and bake for approximately 20 minutes more until reaching 150°F in the center.
  7. Remove from oven and allow it to rest 10-15 minutes. The temperature will rise a little and helps with the moistness.
  8. Slice and serve.

NOTES

  • Love serving this with mashed potato, seasoned green beans, carrots and brown gravy.
