Meatloaf
Ingredients
- 1-1/2 Lb. ground beef
- 1 large egg, beaten
- 1 onion, chopped small
- 1 cup milk
- 1 cup dried seasoned breadcrumbs
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/3 cup ketchup
- 1 Tbsp. spicy barbeque sauce
- 2 Tbsp. brown sugar
- 2 Tbsp. prepared mustard
Instructions
- Preheat oven to 350°F
- Combine ground beef, onion, milk, breadcrumbs, egg, salt and pepper in a large bowl and combine by hand but do not overwork.
- In a separate bowl, combine ketchup, barbeque sauce, brown sugar and mustard and whisk until well blended.
- Line a baking sheet with non-stick aluminum foil, place the meat mixture on the pan and shape into a loaf
- Coat the loaf with 1/2 of the glaze reserving the rest for later.
- Bake 30 minutes, baste with the remaining glaze and bake for approximately 20 minutes more until reaching 150°F in the center.
- Remove from oven and allow it to rest 10-15 minutes. The temperature will rise a little and helps with the moistness.
- Slice and serve.
NOTES
- Love serving this with mashed potato, seasoned green beans, carrots and brown gravy.
